We took all the flavors of a chicken enchilada, ditched the tortilla, and made a delicious gluten-free, reduced carb bowl! Roasted spaghetti squash is topped with sautéed peppers and onions, shredded chicken breast tossed in our homemade green enchilada sauce, and finished with sharp cheddar cheese.
pro tip: remove the lime before heating and squeeze the fresh juice over the meal...chef's kiss!
Preparation
Keep refrigerated until ready to serve. If desired, vent cover and microwave for 2-3 minutes. Not intended for oven use.
